Difford’s Margarita Bitters

We appreciate Bob’s persistence to nail the right balance of lavender and other botanicals to lift and add complexity to a margarita.

“It struck me that some classic cocktails, particularly the daiquiri and margarita lack the extra complexity that bitters might add."

“Our very own Margarita Bitters made by our mate Bob. This elixir is made with lavender and other (top secret) aromatic botanicals. Use 4 drops to lift a margarita, add complexity and extenuate agave character.”

From a culinary perspective…

Margarita on-the-rocks (Difford’s recipe)

“This is how we prefer our margaritas to be served. Tangy citrus and tequila with a hint of balancing sweetness and a faint salty undertone. We also prefer the subtlety of a half a pinch of salt in the drink to a salt laden glass rim.” ~ Simon Difford

Ingredients

  • 45 ml Patron Reposado Tequila
  • 22.5 ml De Kuyper Triple Sec
  • 22.5 ml Freshly squeezed lime juice
  • 1 spoon AquaRiva agave syrup
  • 1/2 pinch salt
  • 4 drops Difford’s Margarita Bitters (optional)

Method

Shake all ingredients with ice and strain into ice-filled old-fashioned glass. Garnish with salt rim (optional) & lime wedge.

Increase the subtlety of an Earl Grey lavender sorbet with a couple of drops of Difford’s Margarita Bitters.

Reviews for Difford’s Margarita Bitters

Bob made a Margarita Bitters for Simon Difford, and the result is marvellous. Offering a balanced bitter-sweet sensation with lavender in the front, followed by a hint of pine needles. The inherent salinity of these bitters will lift your favourite margarita with just a few drops.

It takes the agave plant many years to fully mature before it’s made into tequila. The same patience and dedication is exhibited in these bitters. The hit of lavender and other secret botanical wonders lift the earthiness of tequila whilst still maintaining the true essence of the beloved margarita. Also works wonders in a smokey mezcal based Oaxacan Old Fashioned.

We love Bob and his bitters, but we obviously particularly love these and appreciate Bob’s persistence to nail the right balance of lavender and other botanicals to lift and add complexity to a margarita.
