Liquorice, a flowering plant from the Fabaceae family, has long been treasured for its sweet, aromatic root. One of the world’s oldest herbal medicines, liquorice extract has been used for centuries in traditional remedies and herbalism.

Within the root lie its characteristic flavour compounds: anethole and glycyrrhizin. Anethole also appears in herbs such as coriander and basil, while glycyrrhizin – more than 30 times sweeter than sugar – is used as a natural sweetener in confectionery and beverages.

Bob’s Liquorice Bitters full bodied character complements the natural sweetness of bourbon and the rich molasses notes of dark rum. Whisky sours, raspberry gin cocktails and even a Baby Guinness Shot are elevated with just a few drops. It deepens the herbal bitterness of a Boulevardier or Negroni and introduces a warm, woody sweetness to rye whisky in an Old Fashioned.

Ingredients

  • 60 ml Whitley Neil Raspberry Gin
  • 20 ml raspberry syrup
  • 20 ml Fresh organic lemon juice
  • Good dash of Bob's Liquorice Bitters
  • Egg white organic
  • Fresh garden raspberries

Method

Muddle raspberries in a shaker (I used 7) then add all of the other ingredients and give it a hard shake. Add ice and shake until chilled then double strain into a chilled glass. Garnish with raspberries on a cocktail pick and freeze dried raspberries.

Very unique and true to the real qualities of liquorice. Less anise and more of an intense sweetness that lingers for a long time. I can see these working with Scotches, Mezcals and even Rauchbiers.
