Bob uses toasted coriander seeds and fresh coriander leaves to create a distinctive flavour profile.

Coriander, or Coriandrum sativum, is an aromatic herb in the Apiaceae family. The seeds and leaves come from the same plant but bear little resemblance in flavour or aroma. Famed for its health benefits and used widely across cuisines, coriander is extremely versatile.

The gentle warmth and light green, herbaceous undertones of the leaves are rounded by the subtle earthiness and slightly toasted, bittersweet finish of the seeds.

As a key botanical in London Dry gin, coriander helps lighten juniper’s heavier, pine forward character. Its floral notes bind citrus and earthy botanicals, amplifying the flavour profile of a Paloma or Margarita and adding herbal character to a Tom Collins.

On the sweeter side, mix a little into lemon and coriander shortbread or add to bread recipes for an interesting herb and spice combination.

Ingredients

  • 50ml Pisco
  • 20ml lime juice
  • 12.5ml Poire Eaux de Vie
  • 12.5ml sugar syrup
  • Bob’s Coriander Bitters
  • 15g egg white

Method

Shake well and serve in a glass of your choice garnished with a dash of Bob’s Coriander Bitters and a fresh coriander leaf.
