Bob originally created the bitters for Giuliano Morandin of The Dorchester Bar to enhance the botanical notes in Tanqueray No. 10. It also adds richness and fragrance to both cocktail and culinary recipes.

Ruby grapefruit (Citrus paradisi) is a citrus variety resulting from a natural cross of sweet orange and pomelo. Celebrated for its deep red pulp, its vibrant hue is derived from lycopene, a natural antioxidant also found in tomatoes and watermelon.

Bob’s Grapefruit Bitters are lighter and fresher than orange bitters and work beautifully in gin cocktails. Reinforcing citrus notes and brightening the smoky flavours of tequila and mezcal, grapefruit bitters also lift vodka and rum without overpowering them.

Many cocktails benefit from a few drops or a dash: an Old Fashioned or Whisky Sour gains a burst of citrus and aromatic complexity.

For low- and no‑alcohol drinks, ginger beer or soda water take on a clean, citrusy lift, and a no‑alcohol Paloma, Mojito or Spritzer is enlivened by a few drops.

Ingredients

  • 50 ml Mataroa Gin
  • 30 ml Fresh organic lemon juice
  • 10 ml Grapefruit liqueur
  • 10 ml Creme de mure
  • 10 ml Maraschino liqueur
  • Dash of Bob's Grapefruit Bitters

Method

Add all ingredients to a shaker and fill with ice then give it a good shake. Double strain into a chilled glass with a rock of ice. Garnish with dehydrated grapefruit and a sprig of rosemary.
