Combine gin, syrup and bitters in a shaker over ice and shake hard until chilled. Pour into a champagne flute to halfway and drop a couple of thin slices of stem ginger into the bottom of the glass. Top with sparkling wine.Express the oils from the orange peel over the rim of the glass. Thread the orange peel onto a cocktail stick, add it to the glass and serve.
For a low or non-alcoholic version replace the wine with soda or sparkling water.
